1 Tbs fat
1 3/4 cup corn meal
1 Tbs sugar (optional)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 large eggs
2 cups buttermilk
Preheat oven to 450. Put fat in cast iron pan in heated oven.
Whisk dry ingredient in bowl. Whisk eggs in 2nd bowl and then beat in buttermilk. Add the wet to the dry and mix until just combined. Pour batter into hot pan and bake for 20 to 25 minutes.
